Late night hours and 24 hour spots

How do 24 hour restaurants work?

A 24 hour restaurant runs in shifts, so there is always a crew on. The overnight crew serves the late crowd and uses the slow hours to clean, restock and set up for the morning rush, all without locking the doors for the night.

That overnight crew is small. Worker accounts gathered by Mashed in 2025 say many McDonald's locations run the night with three or four people, usually one on service, one on the grill and a manager. A day shift can have 10 to 15.

The quiet hours are when the heavy cleaning gets done. Workers describe the overnight as the "cleaning shift," when crews mop the dining room, wash dishes and detail clean grills, fryers and shake machines. Supply trucks often arrive in the early morning hours too, so the night crew unloads, restocks and throws out food that can't be used.

Diner chains built their whole business on this schedule. Waffle House has more than 1,900 restaurants in 25 states, open 24/7, 365 days a year. In April 2024, CNN reported that about 75% of Denny's 1,600 restaurants were open 24 hours.

Open all night doesn't always mean the whole restaurant is open. Some fast food stores lock the lobby late and serve only through the drive-thru, so the dining room and the drive-thru can keep different hours. Hours vary by location, even within one chain.

Late Night Food Spots listings note when a lobby closes but the drive-thru keeps serving.
