Bars and last call

When does a bar kitchen close compared to last call?

There's no set rule. Last call follows the alcohol laws where the bar is, but the kitchen keeps whatever hours the owner chooses, and it often stops cooking before the bar stops pouring. The gap can be a few minutes or several hours.

In Texas, state rules set the drink hours. A bar or restaurant can serve until midnight Monday through Friday and until 1 AM on Saturday night. If the city or county is legal for late hours and the bar holds a late hours permit, it can sell until 2 AM any night.

Cities opt in to those late hours themselves. Abilene's city council had to approve a late hours ordinance before its bars could apply for the 2 AM permit. Those hours cover alcohol sales, so they tell you when the drinks stop, not when the fryer shuts off.

Why bar kitchens close an hour before the bar

There's no standard gap, an hour or otherwise. Each owner decides, so two bars on the same block can stop cooking at very different times.

Cost is a big part of it. CNN reported in 2024 that higher labor and food costs have led restaurants to close earlier, and the National Restaurant Association's senior vice president of research said it "doesn't make sense for some of these operators to incur higher costs in traditionally lower sales periods." Paying a cook to stay late for a few orders is a hard sell.

If you want food, check the kitchen's hours, not the bar's, and call if the menu says "late night" without a time.

Late Night Food Spots listings count down to when the kitchen closes, not the bar.
